夏を乗り切る郷土の知恵「宮崎県・冷や汁」

いつもそんぽの家ホームだよりご覧いただきありがとうございます。
7月19日(木)の昼食は夏の暑さを和らげる宮崎県の郷土料理「冷や汁(ひやじる)」をメインにした献立でした。
冷や汁とは、焼いたアジやイワシなどの魚をほぐしてすり身にし、香ばしく炒った味噌とすりごまを混ぜ、しっかりとだしを効かせた冷たい汁に仕立てたものです。
さらに輪切りのきゅうりや豆腐、青じそなどの薬味を加えて,,
麦ご飯にかけて食べるのが一般的な食べ方。暑さで食欲が落ちがちな夏でも、さらっと食べやすく、栄養もたっぷりな一品です。
「昔、田舎で食べた味を思い出すねぇ」と話す入居者様もいらっしゃり 懐かしさを感じながら召し上がる姿が印象的でした。
「冷たくて美味しいね」「さっぱりしてて食べやすい」など、さわやかな味わいが皆様に好評でした。
この日の副菜には、ボリュームのあるヒレカツと、やさしい味わいのはんぺんと小松菜の煮物。ご飯は風味豊かなむぎごはん、デザートには見た目にも涼やかなイチゴゼリーをご用意しました。
冷や汁の涼やかさと、しっかり食べ応えのある副菜の組み合わせで、暑さを吹き飛ばすような満足感のある昼食となりました。今後も季節感を大切に、食を通じて元気をお届けしてまいります。
