節句のしつらえ、春の香りとともに..端午の節句御膳

5月5日の昼食には、**季節の訪れを感じていただける特別メニュー『端午の節句御膳』**をご用意しました。
端午の節句は、もともと男の子の健やかな成長を願う行事として知られていますが、古来中国から伝わった「邪気払い」の風習が由来とされています。日本では、菖蒲湯に入ったり、柏餅を食べたりする習慣があり、「季節の変わり目に健康を祈る日」としても親しまれています。
そんな節句の日にふさわしい御膳の主役は、旬を迎える“初鰹”のたたき。
3月から5月にかけて水揚げされる初鰹は、脂が控えめでさっぱりとした味わいが特徴。薬味の玉ねぎと生姜が、しっかりと鰹のうまみを引き立てます。
また、春の定番「若竹煮」は、筍とわかめの『春先の出会い物』。それぞれの風味を活かしたやさしい煮物は、皆さまからも人気の一品です。副菜には、シャキッとした食感の野菜の酢味噌和えも添え、春らしい彩りと味のバランスを楽しんでいただきました。
